Fungal Foods and Mushroom Medicines
This course touches on a wide range of topics related to kingdom fungi. From cultivating medicinal and culinary mushrooms to myco-remediation techniques, students gain an understanding of the many uses and benefits of mushrooms as well as gain intimate knowledge by tasting and reporting on personal interactions with different preparations of mushroom medicines. In addition, students learn culinary preparation techniques by doing some hands on processing of mushrooms.
