Community Herbalist Certificate
The Community Herbalist Certificate Program is a unique 4-month program that introduces students to the incredible world of plants and their medicinal uses according to various cultures. This program explores the history of plant-based therapies and how to identify and cultivate herbs, use plant-based foods to maintain health, and make and apply herbal remedies to restore health.
Practical Nutrition Certificate
The Practical Nutrition Certificate Program (PNC) is a unique 4-month on-campus program that introduces students to whole foods nutrition and the medicinal uses of food according to various cultures.
The Holistic Doula Certificate is the most comprehensive Doula program in North America. The education and training provided within the Holistic Doula Certificate is based on complementary and integrative approaches, bridging the standard Maternal Health model with holistic therapies. Upon completion, students are prepared to serve as prenatal, birth and postpartum Doulas providing comprehensive support to people across the perinatal period.

This Soba Noodle Salad is a vibrant, satisfying meal perfect for any season! Earthy soba noodles are tossed with crisp vegetables and coated in a savory, soy-based dressing. Enjoy it as a light vegetarian or vegan lunch, or add poached salmon, chicken, or a soft-boiled egg for a heartier dish.
Yields: 4 servings (meal) or 8 servings (appetizer)
Here’s what you’ll need:

Dressing: ½ cup sugar, 6 Tb soy sauce (use GF if needed), ¼ cup water or dashi, 4 minced garlic cloves, 3 Tb rice vinegar, 1 tsp sambal oelek, 1-3 tsp toasted sesame oil, 1 Tb grated fresh ginger.

Noodles: 200g soba noodles (look for yam starch varieties like Hana or King Soba for GF), 1 tsp salt, 2 tsp vegetable oil, 1 tsp sesame oil.

Vegetables: 2 small carrots (matchsticks), 1 cup snow peas (halved), 4 red radishes (matchsticks/thin slices), ½ English cucumber (half-rings), 2 scallions (sliced), 1 bunch watercress (stemmed) or 3 cups arugula/mizuna.

Optional Toppings: Pickled ginger, avocado, poached eggs, toasted sesame seeds.
Quick Steps:

Dressing: Simmer all dressing ingredients (except sesame oil & ginger) for 2 minutes. Cool, then stir in sesame oil and ginger.

Noodles: Boil soba with salt for 5-7 minutes. Drain, rinse with cold water, drain well, then toss with oils. (Can be made 2 days ahead).

Veggies: Blanch carrots and snow peas for 30 seconds; cool. Slice remaining vegetables as directed.

Assemble: For individual bowls, toss noodles with half the dressing and divide. Arrange vegetables on top, drizzle with more dressing, and garnish with optional toppings and toasted sesame seeds.
